Dill, garlic and lemon dip (for veggies OR chips)

I make this dip ALL the time and have it in the fridge for dipping everything from veggies to chips to baquette.  It’s healthy, easy to make, and best of all, the kids love it as much as I do (:

(if you are really behaving, just add more yogurt and skip the mayo altogether but I find the mayo gives it just a bit of added richness that I like)

  • 1 1/2 c fat free Greek yogurt
  • 1/2 c low fat sour cream (if you have it.  If not, just use yogurt)
  • 1/2 c mayo (late is fine but skip that fat free stuff because it’s gross!)
  • 2 tsp minced garlic
  • 1 small minced shallot
  • 1/4 c green onion (optional)
  • 2 Tbsp dijon mustard
  • 1/2 c or more of FRESH chopped dill
  • 1/2 small lemon juice and zest (or to taste.  Start with a little less than 1/2 and add until it has the right amount of tang)
  • salt and pepper to taste

METHOD:  Combine all in food processor and blend.  If you don’t have a food processor just make sure you’re dicing everything very finely before mixing together.
